Where these numbers come from

Every weight and nutrient figure on these pages is read from one hand-checked table of the ingredients home cooks actually use, transcribed from USDA reference data per 100 g of edible portion. The table is verified on every build: each entry has to be internally consistent — the calories have to match the protein, fat and carbohydrate — or the build fails. It is the same table our app uses to work out what a family recipe adds up to a serving, so the numbers you read here are the numbers we rely on ourselves.

Where we cannot answer something honestly, we say nothing rather than guess. An ingredient with no substitution advice has no substitution section.
