Sheet-Pan Chicken Fajitas

Sizzling fajitas without standing over a skillet — chicken, peppers, and onions roast together on one pan while you set the table. A squeeze of lime at the end wakes everything up.

Ingredients

  • 1 tbsp chili powder
  • 1/2 tbsp smoked paprika
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp ground cumin
  • 1/8 tsp cayenne pepper
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 lb chicken breast
  • 2 small yellow onions
  • 3 bell peppers
  • 2 tbsp cooking oil
  • 1 lime
  • 8 small flour tortillas
  • 1/2 cup sour cream
  • handful fresh cilantro

Steps

  1. 1Heat the oven to 400°F. Stir the chili powder, smoked paprika, onion powder, garlic powder, cumin, cayenne, sugar, and salt together in a small bowl.
  2. 2Slice the chicken, onions, and peppers into thin strips and pile everything onto a large rimmed sheet pan.
  3. 3Drizzle on the oil, sprinkle the seasoning over the top, and toss with your hands until every piece is coated. Spread it all into an even single layer.
  4. 4Roast 35 to 40 minutes, giving everything a stir halfway through, until the chicken is cooked and the pepper edges are starting to char.
  5. 5Squeeze the lime over the whole pan while it's still hot.
  6. 6Warm the tortillas and let everyone build their own, topped with sour cream and cilantro if they like.
