Ingredients

  • 1 3 1/2 lb. broiling chicken cut into serving pieces
  • flour
  • olive oil
  • 1 large onion, thinly sliced
  • 1 clove garlic, minced
  • 1 can (16 oz.) whole tomatoes, chopped
  • 1 bay leaf
  • 2 tbsp. tomato paste
  • 1/2 cup dry white wine
  • 1 tsp. marjoram
  • salt
  • freshly ground black pepper
  • 2 large green peppers cut in strips
  • 1/2 lb. mushrooms, thinly sliced

Steps

  1. 1Dredge chicken in flour and brown lightly in a skillet in 2 tbsp. hot olive oil. Transfer to a large saucepan. In same skillet, brown onion and garlic in 1 tbsp. hot oil for 3 minutes. Transfer to saucepan with tomatoes, bay leaf, tomato paste, wine, marjoram, and salt and pepper to taste. Stir and simmer for 40 minutes. Sauté peppers and mushrooms in 3 tbsp. hot oil for 3 minutes.
