Classic Beef Lasagna

Ingredients

  • 1 lb ground beef
  • 1/2 lb Italian sausage
  • 1 yellow onion
  • 4 cloves garlic
  • 1 can (28 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp sugar
  • 15 oz ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan
  • 1/4 cup fresh parsley
  • 12 lasagna noodles
  • 1 lb low-moisture mozzarella
  • salt and black pepper

Steps

  1. 1Brown the beef and sausage with the onion in a wide pot, breaking the meat up, until no pink remains. Add the garlic for the last minute and drain excess fat.
  2. 2Stir in the crushed tomatoes, tomato paste, oregano, basil, sugar, 1 teaspoon salt, and a half cup of water. Simmer low and partly covered for 30 minutes.
  3. 3Stir the ricotta with the egg, Parmesan, parsley, and a pinch of salt and pepper.
  4. 4Heat the oven to 375°F. In a 9-by-13 baking dish, layer: a thin coat of sauce, 4 noodles, a third of the ricotta, a quarter of the mozzarella, and a ladle of sauce. Repeat twice more.
  5. 5Top with the last noodles, remaining sauce, remaining mozzarella, and a shower of Parmesan.
  6. 6Cover with oiled foil and bake 25 minutes; uncover and bake 20 to 25 more until browned and bubbling at the edges.
  7. 7The hard part: rest 15 minutes before cutting so the layers hold their shape.
