Game Day Chili

A big, brawny pot of beef-and-sausage chili with layers of spice and a splash of beer. It only gets better the longer it simmers — and better still the next day.

Ingredients

  • 2 lbs ground beef chuck
  • 1 lb bulk Italian sausage
  • 4 cans chili beans
  • 2 cans diced tomatoes
  • 6 oz tomato paste
  • 1 large yellow onion
  • 3 stalks celery
  • 1 green bell pepper
  • 1 red bell pepper
  • 4 cubes beef bouillon
  • 1/2 cup beer
  • 1/4 cup chili powder
  • 1 tbsp minced garlic
  • 1 tbsp Worcestershire sauce
  • 1 tbsp dried oregano
  • 2 tsp ground cumin
  • 2 tsp hot pepper sauce
  • 1 tsp dried basil
  • 1 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp black pepper
  • corn chips and shredded cheddar

Steps

  1. 1Brown the ground beef and sausage together in your biggest pot over medium-high heat, breaking them up as they cook. Drain off the excess fat.
  2. 2Add everything else except the chips and cheese: beans, tomatoes, tomato paste, onion, celery, both bell peppers, bouillon, beer, and all the seasonings. Stir well.
  3. 3Bring it up to a bubble, then cover and drop the heat to low. Simmer at least 2 hours, stirring every 20 minutes or so — longer is better.
  4. 4Taste near the end and adjust the salt, heat, and sugar to your crowd.
  5. 5Ladle into bowls and let everyone top theirs with corn chips and a handful of cheddar.
