Spicy Sriracha Dragon Noodles

  • 6 oz ramen or lo mein noodles
  • 2 tbsp butter
  • 1/4 tsp crushed red pepper flakes
  • 1 large egg
  • 1 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp sriracha
  • 2 green onions
  • fresh cilantro

Steps

  1. 1Boil the noodles according to the package, drain, and set aside. Stir the brown sugar, soy sauce, and sriracha together in a small bowl.
  2. 2Melt the butter with the red pepper flakes in a large skillet over medium-low heat and let it sizzle for about a minute to infuse.
  3. 3Pour in the egg and scramble gently, breaking it into small pieces as it sets.
  4. 4Add the drained noodles and the sauce. Turn the heat up to medium and toss for a minute or two until every strand is glossy and coated.
  5. 5Off the heat, toss with most of the green onions. Serve topped with the rest and the cilantro.
