Set-and-Forget Pulled Pork

Rub it, drop it in the slow cooker before work, and come home to fall-apart barbecue pork. Feeds a crowd tonight and stocks the freezer for later.

Ingredients

  • 4 lbs boneless pork shoulder
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground cumin
  • 1 yellow onion
  • 1/2 cup chicken broth
  • 2 tbsp apple cider vinegar
  • 1 cup barbecue sauce
  • 8 soft burger buns

Steps

  1. 1Stir the brown sugar, smoked paprika, salt, pepper, garlic powder, onion powder, and cumin together, then massage the rub over every side of the pork.
  2. 2Scatter the sliced onion over the bottom of the slow cooker and set the pork on top. Pour the broth and vinegar around (not over) the meat so the rub stays put.
  3. 3Cover and cook on LOW for 8 hours (or HIGH for 5), until the pork shreds with no resistance.
  4. 4Lift the pork onto a cutting board and pull it apart with two forks, discarding any big pockets of fat.
  5. 5Skim the fat from the cooking liquid. Return the shredded pork to the cooker with the barbecue sauce and a ladle of the liquid, and stir until it's glossy.
  6. 6Pile onto buns and serve with extra sauce. Leftovers freeze beautifully for up to 3 months.
