Classic Diner Meatloaf

The meatloaf everyone's grandmother made better than the diner — tender from a milk-soaked crumb, with a sweet-tangy glaze that caramelizes on top. Leftover slices make the best sandwich of the week.

Ingredients

  • 1 1/2 lbs ground beef
  • 1 large egg
  • 1 yellow onion
  • 1 cup milk
  • 1 cup dried breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce
  • 1/3 cup ketchup
  • 2 tbsp brown sugar
  • 2 tbsp yellow mustard

Steps

  1. 1Heat the oven to 350°F and lightly grease a 9x5-inch loaf pan.
  2. 2In a large bowl, combine the beef, egg, onion, milk, breadcrumbs, salt, pepper, and Worcestershire. Mix gently with your hands just until it holds together — squeezing it hard makes a dense loaf.
  3. 3Press the mixture evenly into the loaf pan.
  4. 4Stir the ketchup, brown sugar, and mustard together and spread the glaze over the whole top.
  5. 5Bake about 1 hour, until the center reads 160°F on a thermometer.
  6. 6Rest the loaf 10 minutes before slicing so the juices settle instead of running out.
