Ingredients

  • 2 salmon fillets
  • salt and black pepper
  • 4 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1 tsp sesame seeds
  • 2 scallions

Steps

  1. 1Take the salmon out of the fridge about 20 minutes ahead so it cooks evenly. Pat the fillets dry and season with salt and pepper.
  2. 2Stir the honey, soy sauce, vinegar, and garlic together in a small bowl.
  3. 3Heat the oil in a nonstick skillet over medium-high. Lay the salmon in and leave it alone for 3 to 4 minutes, until the underside is golden.
  4. 4Flip and cook 2 to 3 minutes on the second side.
  5. 5Pour the sauce into the pan and let it bubble for about a minute, spooning it over the fish as it thickens into a glaze. Pull the salmon at 120°F for a silky center or 130°F for fully firm.
  6. 6Plate with the pan sauce spooned over and a shower of sesame seeds and scallions.
