Feel-Better Chicken Noodle Soup

Ingredients

  • 1 tbsp butter
  • 1/2 cup onion
  • 1/2 cup celery
  • 7 cups chicken broth
  • 2 cups vegetable broth
  • 8 oz cooked chicken breast
  • 1 1/2 cups egg noodles
  • 1 cup carrots
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • salt and black pepper
  • 1 squeeze fresh lemon juice

Steps

  1. 1Melt the butter in a soup pot over medium heat and cook the onion and celery about 5 minutes, until they turn soft and sweet.
  2. 2Pour in both broths, then add the chicken, noodles, carrots, basil, and oregano. Season with salt and pepper.
  3. 3Bring the pot to a boil, then lower the heat and simmer 20 minutes, until the carrots are tender and the noodles are cooked.
  4. 4Taste and adjust the seasoning, then brighten the whole pot with a squeeze of lemon just before ladling into bowls.
