Very Banana Banana Bread

A moist, deeply banana-y loaf that uses up every spotty banana on the counter. Brown sugar keeps it soft for days — if it lasts that long.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 3/4 cup brown sugar
  • 1/2 cup butter
  • 2 large eggs
  • 2 1/3 cups very ripe bananas
  • 1 tsp vanilla extract

Steps

  1. 1Heat the oven to 350°F and grease a 9x5-inch loaf pan.
  2. 2Stir the flour, baking soda, salt, and cinnamon together in a bowl.
  3. 3In a bigger bowl, beat the brown sugar and butter until creamy. Mix in the eggs, mashed bananas, and vanilla until everything is combined.
  4. 4Add the dry ingredients to the banana mixture and fold together just until no dry streaks remain.
  5. 5Scrape the batter into the loaf pan and smooth the top.
  6. 6Bake about 60 minutes, until a toothpick poked into the center comes out clean. If the top browns too fast, tent it loosely with foil for the last 15 minutes.
  7. 7Cool in the pan for 10 minutes, then turn the loaf out onto a rack to finish cooling before slicing.
