Crispy Parmesan Roasted Broccoli

High heat turns broccoli into something kids fight over — browned, crispy edges with garlic and a snowfall of Parmesan. The side dish that disappears first.

Ingredients

  • 1 1/2 lbs broccoli
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/3 cup grated Parmesan cheese
  • 1/2 lemon

Steps

  1. 1Heat the oven to 425°F with a sheet pan inside — a hot pan jump-starts the browning.
  2. 2Toss the florets with the olive oil, garlic, salt, pepper, and red pepper flakes until glossy.
  3. 3Spread the broccoli on the hot pan cut-side down, with space between the pieces so they roast instead of steaming.
  4. 4Roast 18 to 20 minutes, flipping once, until the edges are browned and crisp.
  5. 5Shower with the Parmesan while it's still hot, add a squeeze of lemon, and serve straight from the pan.
