One-Bowl Fudgy Brownies

Deep, dark cocoa brownies stirred together in one bowl in seven minutes flat. A shot of espresso powder makes the chocolate taste more like itself.

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 3/4 cups granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 tsp espresso powder
  • 3 large eggs
  • 8 tbsp unsalted butter
  • 1/4 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup semisweet chocolate chips

Steps

  1. 1Heat the oven to 375°F and grease a 9x13-inch pan (a parchment sling makes lifting them out easy).
  2. 2Put everything except the chocolate chips in one big bowl — flour, cocoa, sugar, salt, baking powder, espresso powder, eggs, melted butter, oil, and vanilla.
  3. 3Stir until the batter turns smooth and glossy, about a minute of mixing. Fold in the chocolate chips.
  4. 4Spread the batter evenly into the pan.
  5. 5Bake 25 to 30 minutes, until the edges just pull away from the sides and a toothpick comes out with moist crumbs — not wet batter, not bone dry.
  6. 6Cool completely in the pan before cutting into squares. Warm brownies taste great but cut terribly.
