  • 1/2 cup cold butter
  • 3/4 cup cold buttermilk

Steps

  1. 1Heat the oven to 450°F. Whisk the flour, baking powder, baking soda, salt, and sugar together.
  2. 2Cut the cold butter into the flour with a pastry cutter or your fingertips until the mixture looks like coarse crumbs with some pea-sized pieces of butter remaining.
  3. 3Pour in the buttermilk and stir just until the dough comes together — do not overmix, or the biscuits turn tough.
  4. 4Turn onto a floured surface, pat into a 1-inch-thick rectangle, and fold it over on itself two or three times to build flaky layers. Pat back to 1 inch thick.
  5. 5Cut with a floured biscuit cutter, pressing straight down without twisting, and place close together on a baking sheet.
  6. 6Brush the tops with buttermilk and bake 12 to 15 minutes until tall and golden brown.
