Classic Carrot Cake with Cream Cheese Frosting

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 3 cups carrots
  • 1 cup chopped walnuts
  • 8 oz cream cheese
  • 1/2 cup butter
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Steps

  1. 1Heat the oven to 350°F and grease two 9-inch round cake pans, lining the bottoms with parchment.
  2. 2Whisk the flour, baking soda, cinnamon, and salt in one bowl.
  3. 3In another bowl, whisk the oil, both sugars, and eggs until smooth. Fold in the flour mixture until just combined, then fold in the carrots and walnuts.
  4. 4Divide between the pans and bake 30 to 35 minutes, until a toothpick comes out clean. Cool completely in the pans on a rack.
  5. 5Beat the cream cheese and butter until smooth, then beat in the powdered sugar and vanilla until light and fluffy.
  6. 6Frost the top of one cooled layer, stack the second on top, then frost the top and sides. Chill 20 minutes before slicing for clean cuts.
