Ingredients

  • 15 oz. can black beans
  • 15 oz. can black eyed peas
  • 14 oz. can shoepeg corn
  • 3 oz. can diced jalapenos
  • 2 oz. jar pimentos
  • 1 bunch green onions, chopped
  • 2 cloves garlic, diced
  • 1 tbsp. water
  • 3/4 cup sugar
  • 1/2 cup red wine vinegar
  • 2/3 cup oil
  • salt and pepper to taste

Steps

  1. 1Rinse and drain well - all can ingredients.
  2. 2Mix all vegetables.
  3. 3In a saucepan, mix water, vinegar, oil and sugar. Boil for one minute. Let cool completely.
  4. 4Pour over vegetable mixture, stir and let sit in refrigerator for 1/2 hour.
  5. 5Serve with tortilla chips.
