Saturday Morning Pancakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 1/4 cups milk
  • 3 tbsp butter
  • 1 large egg
  • 1 tsp vanilla extract

Steps

  1. 1Whisk the flour, baking powder, sugar, and salt together in a large bowl and make a little crater in the middle.
  2. 2Pour the milk, melted butter, egg, and vanilla into the crater and stir just until the batter comes together. A few small lumps are fine — overmixing makes tough pancakes.
  3. 3Heat a griddle or wide skillet over medium-high heat and swipe it with a bit of butter.
  4. 4Ladle about a quarter cup of batter per pancake onto the hot surface. Cook 2 to 3 minutes, until bubbles pop on the surface and the edges look set.
  5. 5Flip and cook another minute or two, until the underside is golden brown.
  6. 6Keep going with the remaining batter, buttering the pan as needed. Serve warm in a tall stack with syrup.
