Chunky Fresh Guacamole

Proper guacamole: ripe avocados mashed just enough, sharpened with lime and jalapeño, kept chunky. Mashing the aromatics into a paste first is what makes it taste restaurant-good.

Ingredients

  • 3 ripe avocados
  • 1/4 cup white onion
  • 1 jalapeño
  • 1/2 tsp salt
  • 2 tbsp fresh lime juice
  • 1/4 cup cilantro
  • 1 Roma tomato
  • tortilla chips

Steps

  1. 1Smash the onion, jalapeño, and salt together against the side of a bowl (or in a mortar) until they turn into a rough, juicy paste — this spreads their flavor through every bite.
  2. 2Halve the avocados, pop out the pits, and scoop the flesh into the bowl.
  3. 3Add the lime juice and mash with a fork, leaving it good and chunky.
  4. 4Fold in the cilantro and tomato. Taste with a chip — it usually wants a bit more salt or lime.
  5. 5Serve right away, or press plastic wrap directly onto the surface to keep it green for a few hours.
