Three-Ingredient Tomato Butter Sauce

Ingredients

  • 28 oz canned whole peeled tomatoes
  • 5 tbsp unsalted butter
  • 1 yellow onion
  • 3/4 tsp salt
  • 1 lb spaghetti or rigatoni
  • grated Parmesan cheese

Steps

  1. 1Pour the tomatoes and their juice into a saucepan. Add the butter, the onion halves (cut side down), and the salt.
  2. 2Bring to a gentle simmer over medium heat, then lower the heat so it barely bubbles. Let it go, uncovered, for about 45 minutes, giving it an occasional stir and crushing the tomatoes against the side of the pot with a spoon.
  3. 3The sauce is done when droplets of butter float free of the tomatoes and it's thickened enough to coat a spoon.
  4. 4Fish out the onion (save it — it's delicious on toast). Taste and add salt if it needs it.
  5. 5Toss with hot pasta and finish with plenty of Parmesan.
