Creamy Garlic Mashed Potatoes

Ingredients

  • 3 lbs Yukon Gold potatoes
  • 6 cloves garlic
  • 1 tbsp salt
  • 6 tbsp butter
  • 3/4 cup heavy cream or whole milk
  • 1/4 tsp black pepper
  • 2 tbsp chopped chives

Steps

  1. 1Put the potato chunks and garlic cloves in a big pot, cover with cold water by an inch, and add the salt.
  2. 2Bring to a boil and cook 15 to 20 minutes, until a fork slides through the biggest chunk with no resistance.
  3. 3Drain well, then return the potatoes and garlic to the hot pot for a minute so the extra moisture steams off — drier potatoes drink up more butter.
  4. 4Mash the potatoes and softened garlic together with the butter.
  5. 5Stir in the warm cream a splash at a time until they're as creamy as you like. Season with salt and pepper.
  6. 6Pile into a bowl, scatter with chives, and serve with a pat of butter melting on top.
